Bittman's How To Cook Everything is a great resource, and the book I bought for myself when I was learning how to cook. I think it is the best cookbook for beginners - it has illustrations to show you how to do different techniques, tells you what to look for in different types of produce, ad well as where to find them and what time of year to look for them. It may not be the cookbook from which you build the menu to a fancy dinner party, but it's great for the sort of food most people actually eat on a week-to-week basis.
